La Choucroute

The department of the Aube is from now on the second French producer of (sauerkraut) choucroute, behind the Bas Rhin.

The production of cabbage and sauerkraut developed with Alsatians’ installation M.L. Grünfelder in the last century in Briennois in the North is of the department.

The big producers are Mr Laurent who finalized to Blignicourt a sauerkraut in the champagne hardly appreciated of the consumers, or still the establishments Lavines which were made a speciality of the sauerkraut in the Cider.
