LE CHAOURCE
The Chaource it's a Product from the terroir of the Aube and the North of the Yonne, is a cheese produced by 7 manufacturers among whom 3 producers farmers, 1 craftsman cheese maker and 3 industrial cheese dairies. 85 Exploitations produce the 20 million liters of cow's milk, to be 2500 tons of cheeses in two formats, 250 grs or 450 grs. This cheese pulls its name of a village Chaource situated in the southwest of the Aube and it would exist for the XIVth century. Since 1970 He benefits from an AOC and from an AOP since 1996. He tastes according to his refining, either in tapas, or in entrance, or to cook and naturally at the end of meal.
